Simple Meal in Minutes

Quinoa, known as an ancient grain, is actually a seed.  It is high in protein (a complete protein in fact), as well is high in fibre, magnesium, manganese, B vitamins and fibre. 

This is one of my favourite, dishes. Its simple, yet delicious.

1 cup quinoa, rinsed well
2 cups water
1 avocado, diced
2 plum tomatoes, diced
1/2 red pepper, diced
Juice of 1 lemon
pinch sea salt
Shredded romaine

Place water and quinoa in pot. Bring to boil. Turn off burner, and cover pot. Leave 15 minutes, to allow water to be absorbed and quinoa to cook. Fluff with fork.

In bowl toss together remaining ingredients (except romaine). Add to quinoa. Serve warm or chilled, over fresh shredded romaine.

3-4 servings.
