Raw Vegan Yogurt—Really.
Posted Apr 07 2011 by Jody MacDonald
Do you enjoy yogurt? Whether or not your body can digest dairy, this simple vegan version is delicious.
Acidophilus is a probiotic. It's necessary for normal digestion. It is a good bacteria that helps to balance normal bacteria in the lower intestines—it keeps the bad guys in check. It has an anti-microbial effect in the body and produces vitamin K.
This is an easy recipe. Soak, blend, sit. What could be easier? Give it a try. And please comment. We love comments. :)
1 cup cashews, soaked over night
1 cup water
1 tsp acidophilus (found in refrigerator section of health food store, Vitasential Nutrition also carries this product).
Drain and rinse cashews.
Place cashews, fresh water and acidophilus in blender.
Blend until smooth.
Let sit, covered, on counter over night (or 24 hours for more tanginess).
Sweeten with honey, agave, stevia or maple syrup. Top with berries, seeds, nuts.
Store in refrigerator for up to 7 days.
For nut free environments or a tasty alternative version, substitute cashews with fresh coconut , and water for coconut water.

You can use almonds or other nuts. There would be more calcium using almonds than cashews.
100g Almonds = 266 mg calcium
100g Cashews = 50 mg calcium
Approximate values.
What is the nutritional information for this? Does it still have calcium? Does it work with other nuts like almonds?
