Apple Tahini Salad

a.k.a. Waldorf Salad
Whether a side dish or an entree, this colourful raw dish is loaded with vitamins, minerals, fibre, and ENERGY. The secret is in the tahiniā¦.buy the good stuff.Enjoy!!
1 apple, diced
2 stalks celery, chopped small
2 carrots, shredded
2 green onions, finely chopped
1/2 red pepper, chopped
1/2 cup walnuts
1/4 cup raisins (optional)
1/4 cup sunflower seeds, soaked
2 cups romaine, chopped
Dressing:
3 TBSP tahini
1 garlic clove
1/4 cup lemon juice
1.5 TBSP apple cider vinegar
2 dates
2 tsp dried dill
1.5 tsp sea salt
water (enough to desired consistency. I use about 1/4 cup)
- Prepare dressing ahead of time by food processing until smooth
- Before serving, toss remaining ingredients with dressing and serve on a bed of chopped romaine leaves.
