Simple Guacamole

I love avocados. They are an excellent source of good fat, B vitamins including folic acid, vitamin E, fibre and potassium.  Avocados are known as a nutrient booster because they enable the body to absorb fat soluble nutrients such as vitamin A and lutein.  Eating them regularly will improve skin and help to regulate hormones.  

Use as a spread on bread or wraps in place of butter or mayo.   

This is one of my favourite ways to enjoy these beautiful nutritious fruits.

Simple Guacamole

2 avocados

2 green onions

1/2 tsp sea salt

1/8 tsp cayenne (optional)

Juice of 1 lime (or lemon)

1 plum tomato

1 tsp cilantro (optional)

Place ingredients in food processor and blend until smooth.

Use as a dip with veggie sticks or spread onto a lettuce leaf, top with veggies, sprouts and enjoy.

Keeps for 3-4 days covered in refrigerator.
