Raw Cashew Hummus

I love hummus. It is a staple in our house. It's the thing I miss most when eating all raw. I can't seem to sprout chickpeas with any success. So my mission was to find a better way to do it. Voila…my cashew hummus was born. It tastes even better the next day. Serve with veggie sticks or dehydrated crackers.
This recipe is suitable for The Vitasential Cleanse, vegan and raw diets (when using all raw ingredients, as I have).
RAW Cashew Hummus
1/4 cup macadamia nuts
1/4 cup cashews
juice of 1 lemon
1-2 cloves garlic
1/2 cup tahini
4 tbsp olive oil
1 tsp sea salt
1 tsp coriander
1 tsp paprika
water to desired consistency
Place nuts and garlic in food processor and blend. Add remaining ingredients and blend until smooth. Gradually add water to desired consistency.
If you don't eat it all in one sitting, store in refrigerator for up to 6 days.
